Watermelon Slice Jell-O Popsicles August 06, 2015 22:57

It's summer and you need a sweet treat to cool you down! Why don't you quickly whip up some of these watermelon slice Jell-O popsicles!

The first step is to make the red Jell-O mixture. We're going to need:

  • 1 package (85g) powdered strawberry Jell-O
  • 1/3 cup (75g) granulated sugar
  • 1 cup (235ml) boiling water
  • 3/4 cup (175ml) cold water

Dissolve the jello using the hot water. Add in the sugar and stir until it's completely dissolved. Finally, add the cold water to cool down the mixture.

Spoon the red Jell-O mixture into your paper cups. You'll probably want to fill each cup a little more than 1/3 of the way. You can always adjust the size of the red, white and green layers by adding more or less of the ingredients.

Chill the red Jello-O layer in the freezer for about 20 minutes or until it begins to become firm. We want it liquid enough to put in the chocolate chips, but firm enough to hold them in place and prevent the chips from collecting at the bottom of the cup.

Gently mix in the chocolate chips. Try to get them spread out as evenly as possible. Put the cups back into the freezer while you're working on the next layer. Be sure NOT to let them completely freeze. Frozen layers will be difficult to put spoons or sticks into.

 

We're going to make the white part of the popsicle now. For this part of the recipe, you'll need:

  • 3/4 cup (200ml) whipping cream
  • 3/4 cup (75g) granulated sugar
  • 125g cream cheese

Fill a tray with ice, water and add a pinch of salt. The salt makes the ice melt at a lower temperature and will make it easier to whip the cream. In a separate bowl, whip the cream until it peaks. Gently mix in the granulated sugar and cream cheese.

 

Layer the whipped cream mixture on top of the firm red layer. This part of the popsicle should be smaller than the red layer. This is supposed to be the white part between the red part of the watermelon and the rind. Put the cups back into the freezer making sure not to let the layers freeze completely.

Make the green Jell-O mixture following the same steps you used for the red part. Just to remind you:

  • 1 package (85g) powdered lime Jell-O
  • 1/3 cup (75g) granulated sugar
  • 1 cup (235ml) boiling water
  • 3/4 cup (175ml) cold water

Gently layer the green Jell-O mixture on top of the cream. If the cream hasn't solidified enough, it may float to the surface when you pour the green Jell-O on top. Be careful!

Slowly insert popsicle sticks or small plastic spoons into the cups to make handles. Make sure enough of the spoon sticks out of the top of each cup.

Put the cups back in the freezer and let them freeze completely.

To remove the popsicles from the cups, dip them in a bowl of warm water for 5-10 seconds. They should slide right out!

 

Try different proportions to get the watermelon look just right! The combination of fruity Jell-O, chocolate chips and the whipped cream tastes awesome! These are great for hot summer days and are popular among kids and adults alike!
